An increase in infections with Listeriosis was one of the conclusions of the scientific advice recently issued by EFSA. Many of these infections occur in ready-made products such as fish and meat products and semi-soft cheeses.
Listeria control
As a producer, you must control the risk of contamination with Listeria monocytogenes. This can be done, for example, by means of a risk invenatisation of your raw materials and production process. You can also use predictive models or challenge tests to support this risk assessment.
