With regard to the composition of coffee and tea, requirements have been laid down in the Commodities Act Decree on the labelling of foodstuffs and the Commodities Act Decree on reserved designations. Rules have also been laid down for the use of certain ingredients such as coloring agents. It is therefore important to guarantee quality and food safety. Various studies are available for this purpose.

For example, there are relatively few micro-organisms present in coffee in connection with the roasting process, which means that a different type of research is sufficient than for the quality assurance of tea, which consists of dried components and poses an increased risk with regard to food safety.
